Julie’s perfect parma
Last night I had the honour of eating my first homemade chicken parmigiana at Ben and Julie’s house. Julie (who seems to think she can’t cook… ha!) had gone all out. Ben tells me she’d crumbed the chicken, made the sauce and baked the whole thing herself.
She did an amazing job - perfect sauce/cheese/chicken ratio, a nice crispy crumb, and a beautifully moist chicken breast. And because she served it with salad instead of chips, I didn’t even have to think about my hips too much.
And then she followed it all up with a gingerbread icecream cake. It was great! I’d never had anything like it!
And the amazing thing is that she didn’t even know how much I loved parmas. Just naturally brilliant I guess.

You’re Parma story inspired me to…have a parma and ask friends what they thought was the best parma in Melbourne. Apparantly The Dick on Chapel St in East St Kilda is voted one of the best!

Great idea! Also have a look at www.superparma.com to see reviews from some guys who take their parmas VERY seriously.

If you really love parmas don’t ever leave Melbourne and especially don’t ever come to WA. Parmas never appear on pub menus here and i have really been mising them since leaving. My regular was at the Richmond Club Hotel. My husband and i would work up an appetite in our class at Calamity Janes Glamour Puss Studios Tap Dancing Academy and then head over to the RCH for the parma, which was so big that even the 2 of us piggies couldn’t get through one each and had to be so lightweight as to share one.

You never told me you had gingerbread Icecream! I have been friends with them for 20 years and no gingerbread icecream. I think I will have to have words with them…
