Hi, I'm an Australian living in cold Estonia! We had some Aussie visitors in the summer who were so happy to be able to buy bananas here. One of my favourite recipes is "Hummingbird Cake" & it doesn't have any birds in it! The recipe can be found in the Australian Women's Weekly "Sweet Old-fashioned Favourites" cookbook. The crushed pineapple makes it very moist & it freezes well. I hope that you try it.

That sounds great, Lady Lunchalot. Count me in!! I'm the multi-tasking mum in the scenario above and our household missed bananas in a big way - the poor offspring were reduced to sharing a single banana on (a fairly rare) occasion. We certainly weren't letting bananas go brown just so we could make banana and walnut bread, or banana smoothies, or banana and ginger cake or.... well you get the idea LOL.
